Demerara: cane sugar with a large grain and a pale amber color. A pleasant toffee flavor.
Sucanat: made from crystallized pure cane sugar, truly unrefined sugar which retains a higher proportion of molasses than other types of cane sugars. It has an intense burnt taste. Good for things like spice cakes and ginger cookies.
Muscovado: cane sugar, moist texture and a strong molasses flavor. Good in savory dishes like barbecue sauces and marinades. Similar to honey.
